Easy Whole-Wheat Pita & Flatbread

Ingredients

  • 200 g whole-wheat flour
  • 200 g bread flour or all-purpose flour
  • 295 g warm water
  • 1¼ teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1 teaspoon olive oil

Directions

  1. Combine both flours, yeast and salt. Add the warm water and olive oil and mix until a shaggy dough forms.
  2. Knead by hand or mixer for about 5–7 minutes, until the dough is smooth and elastic. Cover and let rise about 1 hour, or until noticeably puffy.
  3. Divide into 8 equal pieces and shape into balls. Cover and rest 20–30 minutes.
  4. Place a baking stone, steel or heavy sheet pan in the oven and preheat to 500°F.
  5. Roll each piece into a 6–7 inch round about ⅛ inch thick. Keep the remaining pieces covered.
  6. Bake one or two at a time on the hot surface for about 2–4 minutes, until puffed and lightly browned. Flip for the final 30–60 seconds if needed.
  7. Transfer immediately to a clean towel and cover loosely so the pitas stay soft.
