Ingredients
1 cup dried chickpeas, soaked 8–24 hours and drained well
½ medium red onion, roughly chopped
1 packed cup fresh parsley and cilantro, mixed
3 garlic cloves
1 teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon smoked or sweet paprika
½ teaspoon fine sea salt
¼ teaspoon black pepper
1 teaspoon baking powder
2 tablespoons extra-virgin olive oil, divided
1 tablespoon lemon juice
Directions
Heat the oven to 400°F. Lightly brush a parchment-lined or well-seasoned sheet pan with 1 tablespoon olive oil.
Add the soaked chickpeas, onion, herbs, garlic, cumin, coriander, paprika, salt and pepper to a food processor. Pulse until finely chopped and cohesive but not puréed.
Pulse in the baking powder, lemon juice and remaining tablespoon of olive oil. Let the mixture rest 10 minutes.
Shape into about 16 small patties or flattened balls and arrange on the prepared pan.
Bake 15 minutes, carefully flip, then bake another 10–15 minutes until browned and crisp at the edges.
Serve warm in pita, over a salad or grain bowl, or alongside vegetables and a tahini-style dressing.
