Directions
- Sauté the onion in a large pot over medium heat until softened. Add the ginger and garlic and cook until fragrant.
- Stir in the jalapeño, turmeric, paprika, chili powder, curry powder and salt. Cook for 1–2 minutes to bloom the spices.
- Add the potatoes, carrots, ground cashews, tomato sauce and water. Cover and simmer for about 15 minutes.
- Add the cauliflower, peas, chickpeas and coconut cream. Simmer for about 25 minutes, stirring occasionally, until all the vegetables are tender and the sauce is creamy.
- Stir in the cilantro, adjust the seasoning and serve over basmati rice.
