Ingredients
1½ cups brown basmati rice
2¾ cups water, or according to package directions
2 teaspoons olive oil
2 teaspoons cumin seeds
1 bay leaf
3 green cardamom pods, lightly crushed
1 small cinnamon stick
3 whole cloves
½ teaspoon fine sea salt, or less to taste
2 tablespoons chopped fresh cilantro
1 teaspoon fresh lemon juice
Directions
Rinse the brown basmati rice until the water runs mostly clear. Drain well.
Heat the olive oil in a medium saucepan over medium heat. Add the cumin seeds, bay leaf, cardamom, cinnamon and cloves. Cook 30–60 seconds, until fragrant.
Stir in the drained rice and cook for 1–2 minutes, gently coating the grains with the spices.
Add the water and salt. Bring to a boil, cover, reduce to low and cook according to the rice package—typically 35–45 minutes for brown basmati.
Remove from the heat and rest, covered, for 10 minutes. Fluff with a fork.
Discard the bay leaf, cinnamon stick, cloves and cardamom pods if desired. Finish with cilantro and lemon juice.
