Chickpea Salad Sandwich

Chickpea Salad

  • 1 (15-ounce) can chickpeas, drained and rinsed
  • ¼ cup celery, finely diced
  • 2–3 tablespoons scallions, thinly sliced
  • 2–3 tablespoons mayonnaise or vegan mayonnaise
  • 1–2 teaspoons Dijon mustard
  • 1 teaspoon lemon juice or apple cider vinegar
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder or 1 small garlic clove, minced
  • Salt and black pepper, to taste

Optional Additions

  • 1–2 tablespoons chopped parsley
  • 1 tablespoon finely diced pickles or relish
  • ½ teaspoon maple syrup
  • Pinch of cayenne or chili flakes
  • Tiny splash of soy sauce or a little miso

For Serving

  • Toasted sourdough, whole-grain or sandwich bread
  • Lettuce or spinach
  • Tomato slices
  • Thin cucumber slices
  • Avocado (optional)

Directions

  1. Place the chickpeas in a bowl and mash them to a chunky texture. For the best balance, mash about half until creamy and leave the rest in larger pieces.
  2. Stir in the celery and scallions. Add the mayonnaise, Dijon, lemon juice, paprika, garlic, salt and pepper. Mix until evenly coated.
  3. Taste and adjust with more lemon for brightness, mustard for tang or mayonnaise for creaminess. Fold in any optional additions.
  4. For deeper flavor, chill for 15–30 minutes before serving.
  5. Layer the chickpea salad generously on bread with your preferred vegetables.
