Ingredients

  • 8 ounces whole-grain spaghetti or penne
  • 1 can (15 oz) no-salt-added cannellini beans, rinsed and drained
  • 1 tablespoon extra-virgin olive oil
  • 4 garlic cloves, minced
  • 2 cups cherry tomatoes, halved
  • 5 ounces baby spinach
  • ½ teaspoon crushed red pepper flakes, optional
  • ½ teaspoon black pepper
  • ¼ teaspoon fine sea salt, or to taste
  • 1 tablespoon fresh lemon juice
  • ¼ cup chopped fresh basil or parsley

Directions

  1. Cook the pasta according to package directions until al dente. Reserve ½ cup pasta water, then drain.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and optional red pepper flakes and cook 30 seconds.
  3. Add tomatoes and cook 4–5 minutes. Stir in beans and spinach and cook until the spinach wilts.
  4. Add the pasta, black pepper, salt and lemon juice. Toss, adding a splash of reserved pasta water as needed. Finish with basil or parsley.
