Ingredients 2 cans (15 oz each) no-salt-added cannellini beans, rinsed and drained 2 cups cherry tomatoes, halved 1 large cucumber, diced ½ small red onion, finely sliced ½ cup chopped fresh parsley ¼ cup chopped fresh basil 2 tablespoons extra-virgin olive oil 3 tablespoons fresh lemon juice 1 teaspoon dried oregano ½ teaspoon black pepper ¼ teaspoon fine sea salt, or to taste Helpful Notes Choose no-salt-added beans and lower-sodium pantry ingredients when available.
