Ingredients 4 cups cooked and chilled brown rice 2 cups shelled edamame, thawed 1 tablespoon avocado or olive oil 1 small onion, diced 1 red bell pepper, diced 1 cup frozen peas and carrots 3 scallions, sliced 2 teaspoons grated fresh ginger 2 garlic cloves, minced 2 tablespoons reduced-sodium tamari or soy sauce 1 tablespoon rice vinegar 1 teaspoon toasted sesame oil Black pepper to taste Helpful Notes Choose no-salt-added beans and lower-sodium pantry ingredients when available. Directions Heat a large nonstick skillet or wok over medium-high heat. Add the oil and onion and cook 2 minutes. Add bell pepper, peas and carrots, ginger and garlic. Stir-fry 3 minutes. Add brown rice and edamame. Cook 3–4 minutes, stirring frequently, until hot. Stir in tamari, rice vinegar and sesame oil. Finish with scallions and black pepper.
