Ingredients
2 cups cooked chickpeas, rinsed and dried well
1 tablespoon za’atar seasoning
1 large sweet potato, peeled and diced
1 red bell pepper, sliced
½ yellow onion, thinly sliced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon garlic powder
1–2 tablespoons olive oil total, divided
Salt, to taste
Tahini sauce or hummus, optional
Chopped parsley or lettuce, optional
Whole-wheat pita or brown rice, optional
Directions
Heat the oven to 420°F and line a large sheet pan.
Pat the chickpeas very dry, then toss them with za’atar, a small drizzle of olive oil and a light pinch of salt.
Toss the sweet potato, bell pepper and onion with cumin, smoked paprika, garlic powder and the remaining olive oil. Keep the chickpeas grouped on one side.
Roast 20 minutes, stir everything, then roast another 15–20 minutes until the sweet potato is tender and chickpeas are lightly crisp.
Serve with tahini, hummus, parsley, pita or brown rice as desired.
