Ingredients
½ tablespoon onion powder
½ tablespoon garlic powder
1 teaspoon dried parsley
1 teaspoon dried dill
14 oz extra-firm tofu, pressed and cubed
1 tablespoon olive or avocado oil, plus a small amount for the vegetables
2 tablespoons nutritional yeast
¼ teaspoon salt, plus more only if needed
1 orange bell pepper, sliced
2 jalapeños, sliced, optional
2–3 gold potatoes, cut into small cubes
½ head cauliflower, cut into florets
Tahini dressing, brown rice or pita, optional for serving
Directions
Heat the oven to 420°F and line a large rimmed sheet pan.
Mix the onion powder, garlic powder, parsley and dill.
Toss the tofu with 1 tablespoon oil, nutritional yeast, about one-third of the seasoning blend and ¼ teaspoon salt.
Toss the pepper, jalapeños, potatoes and cauliflower on the sheet pan with a small amount of oil and the remaining seasoning. Push the vegetables aside and add the tofu.
Roast 20 minutes, turn the tofu and stir the vegetables, then roast another 20–25 minutes until the potatoes are tender and tofu is crisp.
