Ingredients

  • 8 ounces 100% buckwheat or whole-grain soba noodles
  • 2 cups shelled edamame
  • 1 red bell pepper, thinly sliced
  • 2 cups shredded red cabbage
  • 1 cup shredded carrots
  • 3 scallions, sliced
  • 2 tablespoons reduced-sodium tamari or soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon fresh lime juice
  • 2 teaspoons grated fresh ginger
  • 1 teaspoon maple syrup, optional
  • 2 tablespoons sesame seeds

Directions

  1. Cook soba according to package directions. Add edamame during the final 2 minutes. Drain and rinse briefly under cool water.
  2. Whisk tamari, rice vinegar, sesame oil, lime juice, ginger and optional maple syrup.
  3. Combine noodles and edamame with bell pepper, cabbage, carrots and scallions.
  4. Toss with the dressing and sprinkle with sesame seeds.
