Wraps 2 large whole-grain tortillas HA ½ cup hummus HA 1 packed cup baby spinach ½ cup shredded carrots ½ cup finely shredded purple cabbage ½ red or yellow bell pepper, cut into matchsticks ½ small cucumber, cut into matchsticks ½ avocado, sliced 1 tablespoon lemon juice Black pepper, to taste Optional Additions ¼ cup broccoli sprouts Fresh parsley or mint 2 tablespoons pumpkin or sunflower seeds HA Helpful Notes Dry the vegetables well so the wraps do not become soggy. For packed lunches, keep cucumber and avocado near the center, surrounded by spinach. Pregnant people, adults 65 and older, young children and people with weakened immune systems should avoid raw or lightly cooked sprouts. Omit them or use another crisp vegetable. Assemble up to 4 hours ahead and keep refrigerated. Directions Warm the tortillas. Warm the tortillas briefly in a dry skillet or microwave until flexible.Build. Spread each tortilla with ¼ cup hummus, leaving a border. Layer spinach, carrots, cabbage, pepper, cucumber and avocado across the center.Season. Drizzle with lemon juice and add pepper. Add herbs, seeds or broccoli sprouts if appropriate for you.Roll.
