Quinoa, Corn & Black Bean Salad

Quinoa, Corn & Black Bean Salad

Salad

  • 3 cups cooked quinoa, cooled
  • 1 (15-ounce) can no-salt-added black beans, rinsed and drained HA
  • 1½ cups corn kernels, thawed if frozen
  • 1 red bell pepper, diced
  • 1 cup diced tomatoes
  • 1 medium avocado, diced
  • ½ cup chopped cilantro
  • 3 scallions, thinly sliced

Cilantro-Lime Dressing

  • ¼ cup fresh lime juice
  • 2 tablespoons extra-virgin olive oil HA
  • 1 teaspoon pure maple syrup or honey, optional HA
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon fine salt, then adjust HA
  • Black pepper, to taste

Directions

  1. Make the dressing. Whisk the lime juice, olive oil, optional sweetener, cumin, paprika, salt and pepper in a large bowl.
  2. Combine. Add the cooled quinoa, beans, corn, bell pepper, tomatoes, cilantro and scallions. Toss until evenly dressed.
  3. Add avocado. Gently fold in the avocado so the pieces remain intact.
  4. Rest. Let stand for 10 minutes before serving. Taste and add more lime or pepper if needed.
