Oatmeal Almond-Butter Cookies with Dark Chocolate

Oatmeal Almond-Butter Cookies with Dark Chocolate

Dry Ingredients

  • 1 cup old-fashioned rolled oats
  • ½ cup whole-wheat flour or oat flour
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine salt

Wet Ingredients

  • ½ cup natural almond butter, well stirred HA
  • ⅓ cup pure maple syrup HA
  • 1 large egg HA
  • 1 teaspoon vanilla extract

Fold-Ins

  • ⅓ cup chopped dark chocolate or dark chocolate chips HA
  • 2 tablespoons sliced almonds, optional

Directions

  1. Prepare. Heat the oven to 350°F. Line a baking sheet with parchment paper.
  2. Mix the dry ingredients. Whisk the oats, flour, baking soda, cinnamon and salt in a medium bowl.
  3. Mix the wet ingredients. In a second bowl, whisk the almond butter, maple syrup, egg and vanilla until smooth.
  4. Make the dough. Stir the dry mixture into the wet mixture just until combined. Fold in the dark chocolate and optional almonds. Let the dough rest for 10 minutes so the oats absorb moisture.
  5. Shape. Scoop 12 rounded portions onto the baking sheet. Gently flatten each to about ½ inch thick because the cookies spread only slightly.
  6. Bake. Bake for 10–12 minutes, until the edges are set and the centers still look slightly soft. Cool on the pan for 10 minutes, then transfer to a rack.
