Banana-Walnut Oat Cookies

Makes 12 cookies · About 30 minutes

Soft oatmeal cookies naturally sweetened with ripe bananas and filled with walnuts, flaxseed, cinnamon and vanilla.

Banana-Walnut Oat Cookies

Cookies

  • 2 very ripe medium bananas, thoroughly mashed
  • 1½ cups old-fashioned rolled oats
  • ½ cup oat flour
  • ½ cup chopped walnuts HA
  • 2 tablespoons ground flaxseed
  • 1 tablespoon melted coconut oil or neutral oil HA
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon fine salt
  • 2 tablespoons maple syrup, optional HA

Directions

  1. Prepare. Heat the oven to 350°F. Line a baking sheet with parchment paper.
  2. Mix. Combine the mashed bananas, oil, vanilla and optional maple syrup. Stir in the oats, oat flour, walnuts, flaxseed, cinnamon, baking powder and salt.
  3. Rest. Let the mixture stand for 10 minutes so the oats and flaxseed absorb moisture.
  4. Shape. Scoop 12 portions onto the prepared pan. Shape into rounds and flatten to about ½ inch thick; the cookies will not spread much.
  5. Bake. Bake for 14–17 minutes, until the bottoms and edges are lightly golden and the centers are set.
  6. Cool. Cool on the pan for 10 minutes before transferring to a rack. The cookies remain soft and tender.
