Citrus-Berry Chia Fruit Cups

Serves 6 · About 20 minutes, plus chilling

A refreshing, naturally sweet fruit dessert brightened with lime, mint and a little pistachio crunch.

Fruit Cups

  • 2 cups strawberries, hulled and quartered
  • 1 cup blueberries
  • 1 cup raspberries
  • 3 medium oranges, peeled and cut into bite-size pieces
  • 2 cups diced mango
  • 3 kiwis, peeled and sliced
  • 2 tablespoons chia seeds
  • Zest and juice of 1 lime
  • 2 tablespoons finely chopped fresh mint, plus more for garnish
  • ¼ cup unsalted pistachios, roughly chopped

Directions

  1. Combine the strawberries, blueberries, raspberries, oranges, mango and kiwi in a large bowl.
  2. Sprinkle with the chia seeds, lime zest, lime juice and mint. Fold gently so the softer berries remain intact.
  3. Cover and chill for 15–30 minutes, allowing the fruit juices and chia to form a light natural dressing.
  4. Divide among six small glasses or bowls. Finish each serving with chopped pistachios and a mint leaf.
