Beet–Berry Ginger Smoothie

Beet–Berry Ginger Smoothie

Ingredients

  • 1 small cooked beet, cooled and quartered
  • 1 cup frozen mixed berries
  • 1 small orange, peeled and seeded
  • 1½ cups low-fat milk or unsweetened soy milk HA
  • ½ cup plain Greek yogurt or unsweetened soy yogurt HA
  • 1 tablespoon ground flaxseed
  • 1 teaspoon finely grated fresh ginger
  • 1 teaspoon fresh lemon juice
  • 1–2 pitted dates, optional HA
  • ½–1 cup ice, as needed

Directions

  1. Blend. Add the beet, berries, orange, milk, yogurt, flaxseed, ginger and lemon juice to a blender. Blend on high until completely smooth.
  2. Adjust. Taste before sweetening. If desired, add one date at a time and blend again. Add ice for a colder, thicker smoothie.
  3. Serve. Divide between two glasses and serve right away.
