Golden Pineapple-Avocado Chia Pudding with Strawberries

Pineapple-Avocado Chia Pudding

  • 1 cup unsweetened milk of choice HA
  • ½ ripe avocado
  • ½ cup fresh or frozen pineapple chunks
  • ¼ cup chia seeds
  • ⅛ teaspoon ground turmeric
  • 1 teaspoon fresh lime or lemon juice
  • ½ teaspoon vanilla extract
  • Small pinch of salt
  • 1–2 teaspoons honey or maple syrup, optional HA

Strawberry-Pineapple Topping

  • ¾ cup fresh strawberries, diced
  • ¼ cup pineapple, finely diced
  • ½ teaspoon lime or lemon juice
  • 1 teaspoon honey or maple syrup, optional HA

Optional Garnishes

  • Sliced strawberries or pineapple
  • Unsweetened shredded coconut HA
  • Chopped pistachios or almonds HA
  • Fresh mint

Directions

  1. Blend the base. Blend the milk, avocado, ½ cup pineapple, turmeric, lime juice, vanilla, salt and optional sweetener until completely smooth.
  2. Add the chia. Pour into a bowl and stir in the chia seeds. Rest 10 minutes, stir thoroughly again, cover and refrigerate for at least 4 hours or overnight.
  3. Prepare the topping. Combine the strawberries, ¼ cup pineapple, lime juice and optional sweetener. Gently mash about one-third of the fruit and refrigerate.
  4. Adjust. Stir the chilled pudding. Add milk 1 tablespoon at a time if too thick, or add 1 teaspoon chia and chill 30 minutes if too thin.
  5. Layer and serve. Divide half the pudding between two glasses, add fruit, then the remaining pudding and fruit. Garnish as desired and serve cold.
