Ingredients 1½ cups packed soft Medjool dates, pitted 1 cup raw walnuts ½ cup rolled oats 1 cup finely grated carrot, squeezed lightly 2 tablespoons ground flaxseed 1 teaspoon cinnamon ¼ teaspoon ground ginger 1 teaspoon vanilla extract Pinch of salt, optional HA ¼ cup unsweetened shredded coconut or chopped walnuts, for rolling Helpful Notes If the dates are firm, soak them in warm water for 10 minutes and drain thoroughly. Store covered in the refrigerator for up to 5 days or freeze for up to 2 months. Directions Pulse the dates, walnuts and oats in a food processor until finely chopped. Add the carrot, flaxseed, cinnamon, ginger, vanilla and optional salt. Process until the mixture holds together when pressed. Divide and roll into 16 balls.
