Ingredients

  • 4 medium sweet potatoes
  • 1 can (15 oz) no-salt-added black beans, rinsed and drained
  • 1 cup corn kernels, thawed if frozen
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ cup fresh salsa or diced tomatoes
  • 1 avocado, diced
  • ¼ cup chopped cilantro
  • 1 lime, cut into wedges
  • ¼ cup plain Greek yogurt or unsweetened plant yogurt, optional

Directions

  1. Heat the oven to 425°F. Pierce the sweet potatoes several times with a fork and bake 35–45 minutes, until very tender. For a faster option, microwave according to your microwave's potato setting.
  2. Warm black beans and corn in a small saucepan with cumin and smoked paprika.
  3. Split each sweet potato and fluff the center with a fork.
  4. Top with the bean mixture, salsa, avocado, cilantro, lime and optional yogurt.
