Lemon-Garlic Broccoli Pasta with White Beans

Ingredients

  • 8 ounces whole-grain pasta
  • 4 cups small broccoli florets
  • 1 can (15 oz) no-salt-added cannellini beans, rinsed and drained
  • 1½ tablespoons extra-virgin olive oil
  • 4 garlic cloves, minced
  • Zest and juice of 1 lemon
  • ½ teaspoon black pepper
  • ¼ teaspoon fine sea salt, or to taste
  • ¼ cup nutritional yeast, optional
  • ¼ cup chopped fresh parsley

Directions

  1. Cook pasta in a large pot. Add broccoli during the final 3 minutes of cooking. Reserve ¾ cup pasta water, then drain.
  2. Return the pot to medium-low heat. Add olive oil and garlic and cook 30 seconds.
  3. Add pasta, broccoli, beans, lemon zest, lemon juice, pepper and salt. Toss with enough reserved pasta water to make a light sauce.
  4. Stir in optional nutritional yeast and parsley and serve.
