Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 3 medium beets, peeled and diced or cut into small matchsticks
  • 4 cups shredded green cabbage
  • 1 can (15 oz) no-salt-added white beans, rinsed and drained
  • 1 can (14.5 oz) no-salt-added diced tomatoes
  • 5 cups unsalted or low-sodium vegetable broth
  • 1 bay leaf
  • 1 teaspoon smoked paprika
  • ½ teaspoon caraway seeds, optional
  • ¼ teaspoon black pepper
  • 1–2 tablespoons red wine vinegar or fresh lemon juice
  • ¼ teaspoon salt, or to taste
  • ¼ cup chopped fresh dill
  • Plain unsweetened low-fat yogurt or plant yogurt, optional

Directions

  1. Warm the olive oil in a large soup pot over medium heat. Add onion, carrots and celery and cook 6–8 minutes until softened.
  2. Add garlic, beets, cabbage, smoked paprika, caraway and black pepper. Cook 2 minutes, stirring.
  3. Add beans, tomatoes, broth and bay leaf. Bring to a boil, reduce to a gentle simmer, partially cover and cook 30–35 minutes until the beets and cabbage are tender.
  4. Remove the bay leaf. Stir in 1 tablespoon vinegar or lemon juice, taste, then add more acidity and up to ¼ teaspoon salt only if needed.
  5. Stir in most of the dill. Serve with remaining dill and optional plain yogurt.
