Ingredients
2 cans (15 oz each) no-salt-added black beans, rinsed and drained
½ cup water
1 teaspoon ground cumin
1 teaspoon smoked paprika
½ teaspoon garlic powder
8 small corn tortillas
2 cups finely shredded cabbage
1 cup diced tomatoes
1 avocado, diced
½ cup chopped cilantro
1 lime, cut into wedges
¼ cup plain Greek yogurt or unsweetened plant yogurt, optional
Directions
Add black beans, water, cumin, paprika and garlic powder to a skillet. Cook over medium heat for 6–8 minutes, stirring and lightly mashing some of the beans.
Warm the corn tortillas in a dry skillet or microwave.
Fill each tortilla with black beans, cabbage, tomato and avocado.
Top with cilantro, a squeeze of lime and optional yogurt. Serve immediately.
