Curried Chickpea Salad Wraps

Creamy curried chickpeas with celery, apple, grapes and spinach in a whole-grain wrap.

Curried Chickpea Salad Wraps

Chickpea Salad

  • 1 (15-ounce) can no-salt-added chickpeas, rinsed and drained HA
  • ¼ cup finely diced celery
  • ¼ cup diced crisp apple
  • ¼ cup halved red grapes or 2 tablespoons raisins
  • 2 tablespoons sliced green onion
  • 3 tablespoons plain Greek yogurt or vegan mayonnaise HA
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • 1 teaspoon curry powder
  • ¼ teaspoon ground turmeric
  • Black pepper and a small pinch of salt

For the Wraps

  • 2 large whole-grain tortillas HA
  • 1 packed cup baby spinach
  • 2 tablespoons chopped cashews or almonds, optional HA

Directions

  1. Mash. Mash about two-thirds of the chickpeas in a bowl, leaving the rest whole for texture.
  2. Mix. Fold in the celery, apple, grapes, green onion, yogurt or mayonnaise, Dijon, lemon juice, curry powder, turmeric, pepper and salt.
  3. Taste. Adjust with more lemon for brightness or curry powder for warmth. Fold in the optional nuts.
  4. Wrap. Warm the tortillas until flexible. Add spinach and chickpea salad, fold in the sides and roll tightly. Cut diagonally.
