Ingredients 2 cans (15 oz each) no-salt-added chickpeas, rinsed and drained 1 large cucumber, diced 1 red bell pepper, diced 5 radishes, thinly sliced ¼ cup finely chopped red onion ½ cup chopped fresh parsley 2 tablespoons chopped fresh mint 2 tablespoons extra-virgin olive oil 3 tablespoons fresh lemon juice ½ teaspoon ground cumin ½ teaspoon black pepper ¼ teaspoon fine sea salt, or to taste Helpful Notes Choose no-salt-added beans and lower-sodium pantry ingredients when available.
