Ingredients 8 ounces whole-grain pasta 1 can (15 oz) no-salt-added chickpeas, rinsed and drained 1 can (15 oz) no-salt-added crushed tomatoes 1 tablespoon extra-virgin olive oil 3 garlic cloves, minced 1 teaspoon Italian seasoning ½ teaspoon black pepper ¼ teaspoon fine sea salt, or to taste 2 cups baby spinach 2 tablespoons chopped fresh basil or parsley Helpful Notes Choose no-salt-added beans and lower-sodium pantry ingredients when available. Adjust seasoning to your taste and individual nutrition needs.
Directions Cook the pasta according to package directions. Reserve ½ cup pasta water before draining. While the pasta cooks, heat olive oil in a large skillet. Add garlic and cook 30 seconds. Stir in chickpeas, crushed tomatoes, Italian seasoning, pepper and salt. Simmer 5 minutes. Add spinach and the drained pasta. Toss until the spinach wilts, loosening with reserved pasta water as needed. Finish with basil or parsley.
