Ingredients
- 6 large celery stalks, thinly sliced on the diagonal
- 1 crisp apple, cored and thinly sliced or diced
- 1 small cucumber, halved and sliced
- ¼ small red onion, very thinly sliced
- ⅓ cup walnuts, roughly chopped
- ¼ cup chopped fresh parsley
- 2 tablespoons chopped fresh dill
- 2 tablespoons fresh lemon juice
- 1 tablespoon extra-virgin olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon apple cider vinegar
- Black pepper, to taste
- ⅛ teaspoon salt, or to taste
- 1 tablespoon unsalted sunflower or pumpkin seeds, optional
Directions
- Add the celery, apple, cucumber, red onion, walnuts, parsley and dill to a large bowl.
- Whisk together the lemon juice, olive oil, Dijon mustard, apple cider vinegar and black pepper. Add only a small pinch of salt if needed.
- Pour the dressing over the salad and toss well so the celery and apple are evenly coated.
- Let the salad stand for 5–10 minutes before serving so the flavors blend while the celery stays crisp.
- Finish with unsalted sunflower or pumpkin seeds if desired.
