Rich Vegan Shepherd’s Pie with Mushrooms

Mashed Potato Topping

  • 2 pounds potatoes, peeled and cut into chunks
  • 3 tablespoons vegan butter or olive oil
  • ½ cup unsweetened oat or soy milk
  • Salt and black pepper, to taste
  • Roasted garlic (optional)

Filling

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 8 ounces mushrooms, finely chopped
  • 1 cup diced carrots
  • 1 cup peas
  • 1 cup corn (optional)
  • 1 cup rehydrated TVP, chopped rehydrated soy curls, or 8–12 ounces plant-based ground meat

Flavor & Gravy

  • 2 tablespoons tomato paste
  • 1 tablespoon soy sauce
  • 1 tablespoon vegan Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon rosemary
  • ½ teaspoon black pepper
  • 1½ cups vegetable broth
  • 1 tablespoon miso paste (optional)
  • 1 tablespoon flour, or cornstarch mixed with water
  • 1 teaspoon balsamic vinegar

Directions

  1. Preheat the oven to 400°F (205°C). Boil the potatoes until tender. Drain, then mash with vegan butter, plant milk, salt and pepper; set aside.
  2. Heat the olive oil in a large skillet. Cook the onion until soft, then add the garlic and mushrooms. Continue cooking until the mushrooms release their moisture and begin to brown.
  3. Add the carrots and your chosen plant protein. Cook for 3–4 minutes. Stir in the tomato paste, soy sauce, Worcestershire, paprika, thyme and rosemary; cook for 2 minutes.
  4. Pour in the vegetable broth and stir in the miso. Simmer for 5 minutes, then add the flour or cornstarch slurry. Cook until the filling resembles a thick stew. Stir in the peas, corn and balsamic vinegar; season to taste.
  5. Spread the filling in a baking dish. Spoon the mashed potatoes over the top and use a fork to create ridges.
  6. Bake for 20–25 minutes, until bubbling and golden. For a crisper top, broil for 2–3 minutes while watching closely. Rest briefly before serving.
