Slow-Cooker Lentil Chili

Ingredients

  • 1½ cups brown lentils, rinsed
  • 1 can kidney beans, rinsed HA
  • 1 large can crushed tomatoes HA
  • 1 onion, diced
  • 2 bell peppers, diced
  • 1 cup corn
  • 5 cups low-sodium broth HA
  • 2 tablespoons chili powder
  • 2 teaspoons cumin

Directions

  1. Add all ingredients except corn to a slow cooker.
  2. Cook on Low 7–8 hours or High 4 hours, until lentils are tender.
  3. Stir in corn during the final 15 minutes.
  4. Adjust thickness with broth or water.
