Ingredients
- 1 cup (80 g) rolled oats
- 1½ cups (360 ml) unsweetened fortified soy milk
- 80 g (about ½ cup) pitted prunes, chopped
- ¼ cup (28 g) chopped unsalted walnuts
- 1 tablespoon (12 g) chia seeds
- ½ teaspoon ground cinnamon
- ½ teaspoon vanilla extract
Directions
- Stir the oats, soy milk, chopped prunes, chia, cinnamon and vanilla in a bowl. Divide evenly between two covered jars or containers.
- Refrigerate for at least 6 hours or overnight, until the oats soften and the mixture thickens.
- Stir each portion, adding a splash of soy milk if you prefer looser oats. Top each with half the walnuts just before serving.
