Ingredients 8 ounces whole-grain pasta 12 ounces mushrooms, sliced 1 tablespoon extra-virgin olive oil 3 garlic cloves, minced 1½ cups frozen peas 5 ounces baby spinach 1 teaspoon dried thyme ½ teaspoon black pepper ¼ teaspoon fine sea salt, or to taste 2 tablespoons fresh lemon juice ¼ cup chopped parsley Helpful Notes Choose no-salt-added beans and lower-sodium pantry ingredients when available. Adjust seasoning to your taste and individual nutrition needs.
Directions Cook the pasta until al dente, reserving ½ cup pasta water before draining. Heat olive oil in a large skillet over medium-high heat. Add mushrooms and cook 6–7 minutes until browned. Add garlic, peas, spinach and thyme and cook until the spinach wilts and peas are hot. Add pasta, pepper, salt and lemon juice. Toss with a splash of reserved pasta water and finish with parsley.
