Homemade Low-Sodium Vegetable Broth

Ingredients

  • 2 onions, quartered
  • 4 carrots, chopped
  • 4 celery stalks, chopped
  • 8 ounces mushrooms
  • 1 head garlic, halved
  • 2 bay leaves
  • Fresh parsley and thyme
  • 10 cups water
  • 1 teaspoon peppercorns

Directions

  1. Combine all ingredients in a stockpot.
  2. Bring to a boil, reduce heat and simmer uncovered 45 minutes.
  3. Strain without pressing hard on the vegetables.
  4. Cool promptly and refrigerate or freeze.
