Ingredients
- 300 g (about 2 cups) tomatoes, chopped
- 400 g canned beans, rinsed and drained
- 2 cucumbers, chopped
- 1 red onion, thinly sliced
- 10 g fresh parsley, chopped
- 1 avocado, diced
- 1 lemon wedge, for finishing
- 20 g finely grated Parmesan cheese
- 2 tablespoons (30 ml) extra-virgin olive oil
- 40 ml water
- 20 g walnuts
- 1 teaspoon maple syrup
- 2 garlic cloves
- 30 g fresh basil leaves
- Black pepper, to taste
- Salt, to taste
Directions
- Combine the tomatoes, beans, cucumbers, red onion and parsley in a large bowl.
- Blend the Parmesan, olive oil, water, walnuts, maple syrup, garlic and basil until creamy but still flecked with herbs. Season with black pepper and only as much salt as needed.
- Pour the dressing over the vegetables and beans and toss gently until evenly coated.
- Fold in the avocado last so the pieces keep their shape.
- Finish with a squeeze of lemon. Serve right away or let the salad stand about 10 minutes for the flavors to come together.
