The Basic Method
Toast for flavor
Optional: toast nuts or seeds until fragrant, then cool slightly. Warm ingredients release their natural oils more readily.
Process patiently
Add nuts or seeds to a food processor. They will move from crumbs to a thick paste and finally to a smoother butter. Stop periodically to scrape the bowl and prevent overheating.
Do not add water
Water can cause nut butter to seize and also shortens storage life. If you need a thinner texture, use a small amount of neutral oil.
Three Easy Starting Points
Tahini
Use hulled sesame seeds. Toast lightly if desired, then process until smooth. Add a teaspoon or two of neutral oil only if needed.
Almond butter
Process roasted or raw almonds until creamy. Cinnamon or vanilla can be added after the butter is smooth.
Sunflower-seed butter
Process toasted sunflower seeds until smooth. This is a useful nut-free option for many households.
Storage & Safety
Clean equipment
Start with clean, completely dry equipment and containers.
Refrigerate
Homemade nut and seed butters contain no commercial preservatives. Store refrigerated and use clean utensils.
Allergies
