Ingredients

  • 1 pound fresh green beans, trimmed
  • 1 tablespoon extra-virgin olive oil
  • 2 garlic cloves, minced
  • 1½ cups cherry tomatoes, halved
  • ¼ teaspoon black pepper
  • ⅛ teaspoon fine sea salt, or to taste
  • 1 tablespoon fresh lemon juice
  • ¼ cup sliced unsalted almonds, toasted
  • 2 tablespoons chopped fresh parsley

Directions

  1. Bring a wide skillet with about ½ inch of water to a simmer. Add the green beans, cover and steam 4–5 minutes until bright green and tender-crisp. Drain.
  2. Return the skillet to medium heat. Add olive oil and garlic and cook for 30 seconds.
  3. Add tomatoes and cook 3–4 minutes until they begin to soften. Return the beans to the pan and season with pepper and salt.
  4. Remove from heat. Toss with lemon juice, almonds and parsley.
