Ingredients

  • 2 cups water
  • 1 can (15 ounces) no-salt-added chickpeas, drained and rinsed
  • 1 cup (100 g) fresh cranberries, finely chopped, or frozen cranberries thawed and chopped
  • 2 medium oranges, peeled and cut into bite-size segments; reserve 2 tablespoons juice for dressing
  • ½ cup (56 g) chopped unsalted walnuts
  • 2 packed cups (60 g) baby spinach, chopped
  • ¼ cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • ¼ teaspoon salt, or less to taste
  • Black pepper, to taste

Directions

  1. Combine quinoa and water in a saucepan. Bring to a boil, cover and reduce to a gentle simmer for about 15 minutes, until the water is absorbed. Remove from heat, rest covered for 5 minutes, then fluff.
